Our take on Spanish Galician Beef

  • Vintage Beef Co is produced from British bred beef cows (no dairy cows) that are at least 5 years old (average is about 8-9 years) or from wagyu beef cows (these range between 9-15 years old).
  • All of the meat is 100% Grass fed including the wagyu and certified by the third party audited Greenham Never Ever program.
  • The carcase weight is around 300-350kg.
  • There are three grades – Reserva MB 1-2, Galiciana MB 3+ and The Matriarch.
  • The cattle are rigorously graded and only 25% achieve the Galiciana grade.
  • Natural State Hanging Method which sees the carcases hung from the hip in their natural position and not from the Achilles thereby promoting better eating quality in the hindquarter cuts, particularly in the Striploin and the Rump.



How does the product compare to the European real deal?

Vintage Beef Co. is most similar to the VACA VIEJA (old cow) beef from the Spanish/French regions in flavour but the fat coverage/surface of our product is deeper which protects the loin muscle (Rib eye, Porterhouse etc) during the dry aging process.

We are the only product from the Australian beef supply chain with a comparable depth of flavour (due to access to high quality pastures year round) to the European product.

The other style of Galician Beef as made famous by Bodega El Capricho’s José Gordón is different as he raises his oxen (steers) on a special diet of grain and grass for over ten years and whilst that style is incredible, Vintage Beef has a clean, minerally – Grass Fed flavour with savory notes of cheese.
